Statesborough Meatloaf


Ingredients:
  • 1 1/2  tablespoon  vegetable oil
  • 1  medium onion, chopped
  • 3  garlic cloves, crushed
  • 2  lb  lean, ground beef
  • 2  teaspoon  salt
  • 1  teaspoon  black pepper
  • 2  eggs, beaten
  • 3/4  cup  V-8 or tomato juice
  • 1/2  cup  chopped parsley
  • 1  tablespoon  Hellfire & Damnation Hot Sauce
  • 1  cup  fresh bread crumbs
Directions:
Preheat oven to 350 degrees. Heat the oil in a skillet and saute onion until translucent, about 5 minutes. Add garlic and saute 1 minute. Transfer the onion and garlic into a large mixing bowl and add the beef, salt, black pepper, eggs, juice, parsley, and sauce. Mix well. Oil a 12 x 8 x 2 inch pan and pour in mixture, molding it into a loaf. Sprinkle the top with breadcrumbs and bake for 1 hour.
