Red Bell Pepper

Small ripe tomato

Can (16 oz.) cooked black beans, rinsed & drained

Minced Cilantro

Grated Monterey Jack Cheese(optional)

Chopped Scallion or Cilantro

Directions:

In a blender or food processor combine beans, tomato, bell pepper, onion, garlic, hot sauces and cilantro. Process until smooth yet slightly chunky. Scoop bean puree into a sauce pan and cook over low heat until hot, about 10 minutes. Stir in the cheese, if desired, and cook until cheese is melted. Serve immediately, garnished with scallions.
