Paradise Pinapple Shrimp Quesadillas


Ingredients:
  • 6  (8 inch) flour or wheat tortillas
  • 12-18  Medium Cooked Shrimp, Sliced Lengthwise
  • 1  lb. shredded cheese (Jack, Cheddar or Brie)
  • 1  Small Avocado, diced
  • 1  Jar Goldwater's Paradise Pineapple Salsa
Directions:
On one half of each tortilla, layer the cheese, shrimp, avocado and a few leaves of cilantro. Moisten the edges, fold the tortilla in half and press to seal. Grill the tortillas on each side in a hot skillet until the cheese melts. Cut the quesadillas into wedges and serve with a generous helping of Goldwater's Pineapple Salsa.
