Curry Chicken & Mango Salad


Ingredients:
  • 2  Boneless Chicken breasts, skin removed (6 oz.)
  • 1  cup  Mayonnaise
  • 1 1/2  teaspoon  Matouks Hot Sauce
  • 1 1/2  teaspoon  Trinidad Pepper Sauce
  • 1  Chicken Bouillon Cube
  • 3  tablespoon  Curry Powder
  • 2  Cloves Garlic, chopped
  • 3  Green Onions, Chopped
  • 2  Sprigs fresh parsley, chopped
  • 1/4  cup  Canned Mango Nectar
  • 1  teaspoon  Salt
  • 1  teaspoon  Ground black Pepper
  • 2  Ripe Mangoes,peeled,pitted and sliced
Directions:
Fry chicken breast until fully cooked, cut into 1/2 inch cubes and set aside. In blender combine: Mayo, hot sauces, bouillon cube, curry, garlic, green onions, parsley, mango nectar, salt abd pepper....puree until smooth and creamy. In bowl combine: chicken and mango slices. Pour the curry sauce on top and toss. Arrange lettuce leaves on plates. Top with chicken and mango. Garnish with parsley and chill or serve.
