Curry Chicken & Mango Salad
Ingredients:
- 2 Boneless Chicken breasts, skin removed (6 oz.)
- 1 cup Mayonnaise
- 1 1/2 teaspoon Matouks Hot Sauce
- 1 1/2 teaspoon Trinidad Pepper Sauce
- 1 Chicken Bouillon Cube
- 3 tablespoon Curry Powder
- 2 Cloves Garlic, chopped
- 3 Green Onions, Chopped
- 2 Sprigs fresh parsley, chopped
- 1/4 cup Canned Mango Nectar
- 1 teaspoon Salt
- 1 teaspoon Ground black Pepper
- 2 Ripe Mangoes,peeled,pitted and sliced
Directions:
Fry chicken breast until fully cooked, cut into 1/2 inch cubes and set aside. In blender combine: Mayo, hot sauces, bouillon cube, curry, garlic, green onions, parsley, mango nectar, salt abd pepper....puree until smooth and creamy. In bowl combine: chicken and mango slices. Pour the curry sauce on top and toss. Arrange lettuce leaves on plates. Top with chicken and mango. Garnish with parsley and chill or serve.
